Red Beans and RiceIngredients:1 pound dried red kidney beans1/2 pound smoked sausage, sliced4 slices bacon, chopped1 small onion, diced1/2 green bell pepper, diced2 celery stalks, diced3 cloves garlic, minced6 cups water or chicken broth1 teaspoon salt1/2 teaspoon black pepper1 teaspoon paprika1/2 teaspoon dried thyme1/4 teaspoon cayenne pepper (optional)2 bay leaves2 cups cooked white rice2 tablespoons chopped green onionsInstructions:Rinse the dried beans and soak them in water overnight. Drain before cooking.In a large pot over medium heat, cook the chopped bacon until crispy. Add the sliced sausage and cook until lightly browned.Add the diced onion, bell pepper, and celery. Cook for 4 to 5 minutes until softened. Stir in the minced garlic and cook for 30 seconds.Add the soaked beans, water or chicken broth, salt, black pepper, paprika, thyme, cayenne if using, and bay leaves. Stir well.Bring to a boil, then reduce heat to low. Cover and simmer for 1 1/2 to 2 hours, stirring occasionally, until the beans are tender and the broth thickens.Remove the bay leaves.
